Chalky clay; powdery, alkaline, rich in organic matter. Elevation: 30m above sea level.

Harvest
Manual harvest on 22/08/2022. Grapes picked before full ripeness to retain green tannins and good acidity, balancing what we consider to be Malvasia Nera's excessive fragrance and persistence.

Winemaking
The grapes are hand-harvested and transported in bulk to the winery where they're destemmed and crushed. Fermentation begins spontaneously with a ripasso technique over the pomace of our "premium wines". Skin maceration lasts approximately 10 days with continuous pump-overs to enhance color extraction. The must is racked after completed fermentation. Malolactic fermentation follows, then a first racking during cool late autumn temperatures. Subsequent rackings remove lees and solid deposits settling at the bottom of the silos. Rests until bottling in 1-liter bottles with crown caps.
