Description
Lunatico
Lunatico is a Dei Agre red wine made exclusively from Primitivo grapes. Refined, with just the right alcohol level, its elegant fruit character is enhanced by traditional bush vine cultivation on alluvial soils known as "Vignali". Called Lunatico ("moody") because it's never the same from one year to the next. Many vineyard operations follow lunar phases - a practice we apply to all our vineyards.
Classification:
Rosso IGT Salento
Grape Variety:
Primitivo 100%
Vine Training System
Young Puglian bush vines (approximately 18 years old)
Soil
Soil: Alluvial terrain with clay patches. Sea level: 30m.
Harvest
Manual and selective harvest. On 22/09/2021, we picked the required quantity for the "pied de cuve" (starter culture). On 25/09/2021, we harvested the main grape "mass" for vinification.
Winemaking
The grapes are hand-harvested in crates and brought to the winery where they're destemmed and crushed. Fermentation begins spontaneously with a "pied de cuve" prepared days earlier, to which the main grape mass is added to continue fermentation in fiberglass cement tanks. Skin maceration lasts approximately one week. The must is racked after completed fermentation (0 residual sugar). Malolactic fermentation follows, then a first racking during cool late autumn temperatures. Batonnage. Subsequent racking. Rest until bottling. Periodic tastings to monitor evolution.
