Negroamaro, Primitivo and Malvasia in varying percentages with prevalence of the first variety.
Soil
Chalky clay; powdery, alkaline, rich in organic matter. Elevation: 30m above sea level.
Vine Training System
Spur Cordon
Harvest
Manual harvest, final pass in late September 2023.
Winemaking
The grapes are hand-harvested and transported in bulk to the winery where they're destemmed, crushed, and immediately pressed. Fermentation begins spontaneously with a ripasso technique over the pomace of Amaranto.
Followed by maturation in temperature-controlled silos to preserve freshness. Subsequent rackings remove lees and oxygenate the wine.
Rests until bottling in 1-liter bottles with crown caps.
Final notes: The 2023 vintage was excessively humid, with heavy rains in May and June falling on Primitivo's small clusters and Negroamaro's flowers. From the little saved fruit, we produced only rosé. We learned so much.
