Racimolo

Racimolo, Dei Agre red wine made exclusively from NegroAmaro grapes. It's an extremely "local" varietal - we have a soft spot for it. It expresses all the minerality of the clay soil and the scents of the surrounding Mediterranean scrub. "Racimolo" is the botanical term for the vine's flower. We couldn't have chosen any other name for this wine!

Harvest

Winemaking
The grapes are hand-harvested in crates and brought to the winery where they're destemmed and crushed. Fermentation begins spontaneously with a "pied de cuve" prepared a few days prior, to which the main grape mass is added to continue fermentation in fiberglass cement tanks.
Skin maceration lasts about one week with continuous pump-overs to enhance color extraction. The must is racked after completed fermentation with 0 residual sugar.
Malolactic fermentation follows, then a first racking during cool late autumn temperatures. Batonnage. Subsequent racking. Rest until bottling. Periodic tastings to monitor evolution.
