Winemaking
Selected grapes are harvested in the vineyard and placed in crates; they are then fully destemmed and gently pressed. The juice remains in contact with the skins for no more than 6 hours to extract the desired color using the bleeding method. The must is then separated from the skins to begin spontaneous fermentation.
To activate the yeasts present on the skins, we add the so-called “pied de cuve” that we prepared a couple of days before the arrival of the “massa” in the winery.
Rest and maturation take place in stainless steel tanks until bottling.
Bottling
August 2024, last day of the waning moon.
